Jaggery, a traditional sweetener, is a healthy replacement to the white refined sugar. The Indian Institute of Technology Bombay has developed a mobile jaggery plant that produces consistent quality of jaggery in a hygienic, energy-efficient, economical method with minimal human intervention during the process. The jaggery manufacturing unit can easily be mounted on tractor trolleys and carried to sugarcane fields, thus saving time and effort. This project is sponsored partly by Rajiv Gandhi Science and Technology, Mumbai and partly by Tata Centre for Technology and Design, IIT Bombay.</p>
